Analiza technologicznych aspektów doskonalenia systemu obrotu mlekiem surowym w Polsce

Na podstawie danych z okresu minionych kilku lat przedstawiono technologiczne aspekty transformacji systemu obrotu mlekiem surowym w Polsce, z uwzględnieniem odbioru mleka autocysternami bezpośrednio z gospodarstw i punktów zbiorowego chłodzenia. Określono powiązania procesu upraszczania technologii obrotu mlekiem surowym ze zmianami jego jakości mikrobiologicznej. Wskazano na korzyści wynikające z wdrażania rozwiązań sprzyjających zachowaniu łańcucha chłodniczego na etapie obrotu mlekiem surowym.

On the basis of data from the last few years the system's transformation of raw milk turnover in Poland was analysed in technological aspects. Direct milk collection from the farms and collective cooling points by means of the tank trucks was taken into consideration. The relations between simplification of the raw milk turnover technology and the changes in its microbiological quality were determined. Some advantages resulted from implementation of the solutions that promote keeping up the cooling chain on the stage of raw milk turnover were pointed out.
