Inżynieria procesów przetwórstwa spożywczego, powstała w wyniku integracji teorii naukowych oraz dorobku praktyki produkcyjnej wielu jej branż. Wymaga ona uporządkowania tego procesu w ujęciu systemowym. W artykule przedstawiono klasyfikację maszyn i aparatów przetwórstwa spożywczego, uwarunkowania w ich powstawaniu oraz relacje z surowcami i ich właściwościami.

Engineering of processes of the food processing, came into existence as a result of integration of scientific theories and achievements of the production practice many of her branches of food industry, requires the continuation of this process in the systemic approach. In the article a ranking of machines and apparatuses of the food processing was presented, of conditioning in their coming into existence and relations with raw materials and their properties.
