Contamination of fruits and vegetables with metals and the harmful effect of the latter (particularly of Cd, Pb and Hg) on the human organism are presented. Long-term investigations have proved that level of pesticide residues in food arouses no special fears, the more that they are removed in the course of technologic or culinary processes. The content of nitrates and nitrites is presented, particularly in vegetables, and proposal of their removal off vegetables by the method developed by the State Hygiene Centre is given. Occurrence of residues of poly cyclic aromatic carbohydrates, particularly of the cancerogenic benzopyrene, is discussed.
