Kinetyka destrukcji termicznej przetrwalników Bacillus stearothermophilus w instalacji przepływowej

Badania przeprowadzono dla wodnych zawiesin spor bakterii Bacillus stearothermophilus poddanych obróbce cieplnej w instalacji przepływowej. Wyznaczono wartości energii aktywacji oraz stałe kinetyczne procesu aktywacji i destrukcji termicznej spor w instalacji UHT i uzyskane wyniki porównano z wynikami badań przeprowadzonych z użyciem kapilar.

Investigations were carried out for the suspension of Bacillus stearothermophilus in water subjected to thermal treatment in a UHT installation. The values of activation energy and kinetic constants of activation and thermal destruction of spores in a UHT installation were determined and compared with the results of investigations with the use of capillaries.
