Milk is a food product because of the short term stability and during its production and transport must be complied with strictly defined quality standards. Transport of milk several processes in which it is essential to maintain a specific temperature and sterility of transport. The quality of transport depends on the quality of the raw material. This paper focuses on the presentation of the elements determining the quality of raw materials in the dairy industry in the context of transport processes.
