Culinary manuscripts in the Berlin Collection (« Berlinka ») at the Jagiellonian Library in Krakow : assessment and perspectives

Artykuł omawia pięć rękopisów gastronomicznych powstałych między XVI a XIX wiekiem, przechowywanych w Bibliotece Jagiellońskiej w Krakowie, a pochodzących z dawnej Preussische Staatsbibliothek w Berlinie. Uwzględniono wcześniejsze badania nad tymi reliktami dawnej kuchni francuskiej, przeprowadzone przez autora artykułu oraz jego byłych studentów (stanowiące więc podsumowanie), a także przedstawiono nowe perspektywy badawcze.

L’article concerne cinq livres gastronomiques, conservés à l’état manuscrit, exécutés du XVIe au XIXe siècle, disponibles à la Bibliothèque Jagellonne de Cracovie et provenant de l’ancienne Preussische Staatsbibliothek de Berlin. On y tient compte des recherches menées auparavant sur ces témoins de la cuisine française d’autrefois aussi bien par l’auteur du présent article que par ses anciens étudiants (c’est donc un bilan) et on montre les nouvelles perspectives de recherche.

The article discusses five gastronomic manuscripts created between the 16th and 19th centuries, housed at the Jagiellonian Library in Kraków and originating from the former Preussische Staatsbibliothek zu Berlin. Prior research on these relics of French cuisine from bygone eras, conducted by both the author of this article and his former students, was considered (so this is a summary) and new research perspectives were presented.
