Attributive ethnonyms and food : a lexicographical comparison between Italy and some countries of continental Europe

L’article présente une analyse ethnolinguistique de différents ethnonymes attributifs liés aux habitudes alimentaires, notamment dans une perspective diachronique, mais aussi synchronique. La communauté italienne et les définitions qu’elle propose dans certains dictionnaires monolingues pour définir les communautés germanophones (d’Allemagne, d’Autriche et de Suisse) sont placées au centre de l’analyse. À travers la consultation de dictionnaires monolingues allemands en ligne, on analyse les ethnonymes liés à la nourriture que les germanophones ont à leur tour utilisés pour définir les Italiens, avec quelques observations contrastées de leur présence en néerlandais et en polonais. L’objectif est d’observer les évolutions diachroniques et la valeur de ces ethnonymes (facétieux, péjoratifs, etc.). L’analyse montre que dans les dictionnaires monolingues de langue italienne les ethnonymes liés aux habitudes alimentaires pour définir les locuteurs allemands assument une valeur ambivalente, discriminatoire, mais aussi ludique ; par contre, les dictionnaires de la langue allemande proposent une valeur presque exclusivement discriminatoire, également en raison des conditions géopolitiques, comme la vision d’un monde méditerranéen plus chaotique et surtout la forte émigration économique des Italiens vers les terres germanophones au cours des dernières décennies. Nous y trouvons la confirmation que les habitudes alimentaires sont l’un des principaux éléments qui caractérisent historiquement et culturellement l’image générale d’une communauté différente de celle d’appartenance.

The article presents an ethnolinguistic analysis of different attributive ethnonyms related to eating habits, especially in a diachronic, but also synchronic perspective. The Italian community and the definitions it proposes in some monolingual dictionaries to define the German-speaking communities (of Germany, Austria and Switzerland) are placed at the center of the analysis. Through the consultation of monolingual German online dictionaries, we analyze the ethnonyms related to food that German speakers in turn used to define Italians, with some contrasting observations of their presence in Dutch and in Polish. The aim is to observe diachronic evolutions and the value of these ethnonyms (facetious, pejorative, etc.). The analysis shows that in the monolingual dictionaries of Italian the ethnonyms related to food habits to define German speakers assume an ambivalent, discriminatory, but also playful value, while the dictionaries of German propose an almost exclusively discriminatory value, also due to geopolitical conditions, such as the vision of a more chaotic Mediterranean world and above all the strong economic emigration of Italians to German-speaking lands in the past decades. This confirms of how eating habits are one of the main elements that historically and culturally characterize the general image of a community different from that of belonging.
